桑黄与冠突散囊菌发酵桑叶红茶功能性对比 被引量:2

Comparative on The Functional Properties of Mulberry Black Tea Fermented by Phellinus igniarius and Eurotium cristatum

摘要 桑黄和冠突散囊菌均是一种能在木质基质上生长的有益真菌,当前桑黄以直接食用子实体为主,而冠突散囊菌是茯砖茶中的优势菌种。通过对比桑黄和冠突散囊菌发酵桑叶红茶的功能性成分,探究2种益生真菌的深加工及保健功效。结果表明桑黄发酵茶中多糖含量最高,为0.410 mg·m L^(-1),且羟自由基清除率最强,达到60.31%;冠突散囊菌发酵茶中黄酮含量最高,达到60.65μg·m L^(-1),多糖含量较桑叶红茶提升83.17%,达0.279 mg·m L^(-1)。 Both Phellinus igniarius and Eurotium Cristatum are beneficial fungi that can grow on wood matrix.At present,P.igniarius is mainly direct edible fruit body,and Eurotium Cristatum is the dominant strain in Fuzhuan tea.By comparing the functional components of mulberry black tea fermented by P.igniarius and E.Cristatum,the deep processing and health care effects of two probiotic fungi were explored.The results showed that the polysaccharide content in mulberry black tea fermented by P.igniarius was the highest,up to 0.410 mg·m L^(-1),and the hydroxyl radical scavenging rate was the strongest,up to 60.31%.The flavone content in mulberry black tea fermented by E.Cristatum was the highest,reaching 60.65μg·m L^(-1),and the polysaccharide content was 83.17%higher than that of mulberry tea,reaching 0.279 mg·m L^(-1).
