摘要
本文主要探讨了HACCP体系在蛋卷生产中的应用,通过对蛋卷生产各个环节影响质量的因素进行危害分析,进而确定蛋卷生产的关键控制点、监测方法和纠偏措施,从而为蛋卷产品质量的提升提供借鉴。
This paper mainly studies the application of HACCP system in egg roll production. By analyzing the quality factors in egg roll processing, the key control points, monitoring methods and corrective measures are determined, so as to provide reference for the improvement of egg roll product quality.
