摘要 近年来,石榴的种植及生产越来越受到国家和众多科研人员的重视。与此同时,石榴产品生产和加工技术却一直没有较大突破,因此石榴的加工方式研究亟待拓展深入。文章首先介绍了石榴的栽培历史及发展现状,目前,石榴主产区可分为两个区域:北部地区和南部地区,遍及新疆、陕西、河南、安徽四川和云南等地区,面积达1万多hm 2,年产量达2万t以上。石榴具有的抗氧化作用、抑菌作用、医药作用和营养作用,通过整理汇总石榴的化学成分及其加工进程,并分析、探讨研究市场上现有的石榴系列产品,希望能对石榴的加工研究、医学应用及相关产品的开发提供依据。 In recent years,the cultivation and production of pomegranate are getting more and more attention from the country and many researchers.At the same time,there has been no major breakthrough in the production and processing technology of pomegranate produces.Therefore,the research on the processing methods of pomegranate needs to be expanded.Firstly,the history and development status of pomegranate cultivation are introduced.At present,pomegranate main production areas can be divided into two regions:northern region and southern region,covering xinjiang,Shaanxi,Henan,Anhui,Sichuan and Yunnan,with an area of more than 10,000 hm 2 and an annual output of more than 20,000 tons.Pomegranate has antioxidant,antibacterial,medicinal and nutritional effects,this article summarizes the chemical composition and pharmacological function of pomegranate,and on this basis,analyze the existing pomegranate series products on the market,in order to provide a basis for the processing research,medical application and the development related products of pomegranate.
