2011—2020年深圳市福田区市售禽畜类产品中沙门氏菌监测结果分析 被引量:5

Surveillance on livestock and poultry products on sale for salmonella in Futian District of Shenzhen from 2011 to 2020

摘要 目的了解深圳市福田区市售禽畜类产品中沙门氏菌(salmonella)的污染状况,为食源性疾病防制提供科学依据,为开展食品安全风险评估提供基础资料。方法2011—2020年随机选取深圳市福田区内超市和市场作为监测采样点,采集市售禽畜肉类及其内脏食品共421份,依据GB4789.4-2010进行沙门氏菌检测。使用SPSS 19.0软件对数据进行统计分析,检出率采用χ^(2)检验进行组间比对。结果2011—2020年深圳市福田区421份禽畜类产品监测结果显示,沙门氏菌的总体检出率为27.55%,其中猪肝检出率最高,达38.55%,4类禽畜产品的检出率差异有统计学意义(P<0.05);2011—2020年禽畜类产品中沙门氏菌检出率呈现波动走势,其中2013年检出率最高(53.33%),不同年份之间检出率差异有统计学意义(P<0.05);禽肉类和畜肉类的沙门氏菌检出率均在2013年最高(均为55.56%);猪肝的沙门氏菌检出率普遍偏高,在2016年最高(77.78%),且各年份比较差异有统计学意义(P<0.05),鸡胗的沙门氏菌检出率在2011年、2013年、2016年和2017年均为33.33%。不同季节总体检出率差异有统计学意义(P<0.05),以春季和冬季最高(均为33.33%)。在市场和超市采集的禽畜类产品沙门氏菌检出率分别为27.43%和27.72%。结论深圳市福田区市售禽畜类产品存在不同程度的沙门氏菌污染,有必要适时开展高危食品的风险评估,提出风险管理建议,同时应加强综合监管,积极开展健康宣教。 Objective To evaluate the contamination status of salmonella of livestock and poultry products on sale in Futian District of Shenzhen,so as to provide scientific basis for the prevention and control of foodborne diseases,and to provide basic data for the food safety risk assessment.Methods Supermarkets and farmers markets in Futian District of Shenzhen were randomly selected as monitoring sampling points during 2011 to 2020.A total of 421 samples of livestock and poultry products on sale were collected and detected for Salmonella according to GB 4789.4-2010.SPSS 19.0 software was used for statistical analysis and the detection rate between groups was compared byχ^(2).Results According to the results of monitoring,the total detection rate of Salmonella was 27.55%,and the detection rate of pork liver was the highest(38.55%).There was statistically significant difference in the detection rate of the four types of livestock and poultry products(P<0.05).The detection rate of Salmonella of livestock and poultry products fluctuated during 2011 to 2020,and the rate in 2013 was the highest(53.33%).The difference of detection rate among different years was statistically significant(P<0.05).The detection rates of Salmonella of poultry and livestock meat were the highest in 2013(both 55.56%).The rate of pork liver was generally high,and highest in 2016(77.78%),with statistically significant difference among different years(P<0.05).The detection rate of Salmonella of chicken kidney was 33.33%in 2011,2013,2016 and 2017.There was statistically significant difference in the total detection rate among different seasons(P<0.05),and the detection rate was the highest in spring and winter(33.33%).The detection rate of farmers markets and supermarket was 27.43%and 27.72%,respectively.Conclusions There existed different degrees of Salmonella contamination in livestock and poultry products sold in Futian District of Shenzhen.It is necessary to carry out risk assessment of high-risk food,put forward risk management recommendations,stre
