4种观赏海棠果实成熟前后维生素C含量变化研究 被引量:2

摘要 为深入研究海棠果实的可食性应用价值,选择天津地区4种观赏性海棠(八棱海棠、‘绚丽’海棠、西府海棠和珠美海棠)果实作为试验材料,自结实期起到完全成熟后,采用2,6-二氯酚靛酚法对其维生素C含量进行监测。结果表明:4种观赏海棠果实中维生素C含量的变化最终都会趋于稳定状态,但其在试验期内的变化动态却存在一定的种间差异,其中西府海棠和珠美海棠的果实成熟期相对一致,‘绚丽’海棠较二者早熟,而八棱海棠较二者晚熟;成熟后的4种海棠果实维生素C含量表现为八棱海棠>‘绚丽’海棠>西府海棠>珠美海棠,其中前二者与后二者差异显著。综上,就果实维生素C含量而言,4种海棠中八棱海棠和‘绚丽’海棠具有更高的营养功效和果实副产品开发利用价值。 In order to study the Edible and applied value of crabapple fruits,the four ornamental crabapple fruits(Malus robusta,Malus'Radiant',Malus.micromalus and Malus zumi)in Tianjin area were selected as experimental materials,the content of vitamin C from the fruiting stage to full maturity were monitored by the method of 2,6-dichlorophenol indophenol.The results showed that the changes of vitamin C content in the four ornamental crabapple fruits were stable in the end,but there were interspecific differences in the dynamics of vitamin C content during the trial period.The fruits maturity of Malus micromalus and Maluszumi was relatively the same,and the fruitsmaturity of Malus'Radiant'was earlier than that of the two species,while the fruitsmaturity of M.robusta was later.The content of vitamin C in the four fruits was showed that Malus robusta>Malus'Radiant'>Malus micromalus>Malu zumi,and the difference between the former two and the latter two was significant.To sum up,in terms of the vitamin C content of fruits,the Malus robusta and Malus'Radiant'has higher nutritional effect and value of fruit by-product development and utilization in the four ornamental crabapple fruits.
