摘要
本研究以糙米、燕麦为主要原料,应用工业级高压射流磨系统制备全谷物浓浆。全谷物浓浆最佳配方为糙米2.4%、燕麦1.6%、黄豆0.8%、核桃0.5%、花生0.5%、芝麻0.2%、白砂糖4.4%;复合稳定剂最佳配方为卡拉胶0.03%、黄原胶0.08%、CMC-Na0.10%、单甘脂0.11%、蔗糖酯0.06%,总添加量为0.38%;高压射流磨120 MPa压力处理1次,浓浆平均粒径17μm。最终全谷物浓浆成品稳定,静置12个月后仅产生轻微沉淀现象。
In this study,brown rice and oats were used as the main raw materials with the application of an industry-scale micofluidizer system to prepare a whole grain thick slurry.The best formula for whole grain thick syrup was 2.4%brown rice,1.6%oats,0.8%soybeans,0.5%walnuts,0.5%peanuts,0.2%sesame seeds,and 4.4%white sugar;the best formula for compound stabilizers was carrageenan 0.03%,xanthan gum 0.08%,CMC-Na 0.10%,monoglyceride 0.11%,sucrose ester 0.06%,the total addition amount of compound stabilizers was 0.38%;with the treatment of industry-scale micofluidizer system at 120 MPa pressurefor one time,the average particle size of the whole grain thick slurry was 17μm.The final whole grain thick pulp kept stable during storage,and only occured slight precipitation after 12 months of storage.
