摘要
为保证泰山(N牌号)糖料质量稳定,确定最佳存储时间,采取物理指标检测、GC-MS指纹图谱分析、嗅香辨别、感官质量评价等方法,研究了不同存储环境下糖料质量随时间的变化趋势。结果表明:泰山(N牌号)糖料质量受环境温度的影响明显,且糖料质量的稳定性不能单纯地以指标数据作为判定标准。泰山(N牌号)糖料的存储时间为5d。因此,建议糖料质量评价应引入技术人员进行嗅香及感官质量评价;糖料存储环境要设置冷藏区域。
In order to ensure the stability of sugar quality,determine the best storage time,The change trend of sug⁃ar quality with time under different storage environments was studied by means of physical index detection,GC-MS fingerprint analysis,aroma discrimination,sensory quality evaluation,etc.The results show that the quality of Tais⁃han(trademark N)sugar is obviously affected by the ambient temperature.Moreover,the quality stability of sugar cannot be judged solely by index data.The storage time of Taishan(trademark N)sugar was finally determined to be 5 days.Therefore,put forward scientific suggestions:The quality evaluation mechanism of sugar is to introduce technicians to carry out aroma and sensory quality evaluation;Cold storage area should be set for sugar storage envi⁃ronment.
