摘要
快速检测技术是保障食品安全的重要技术支撑,是落实法律要求、实现科学监管的基础。对食品中的有害因子及主要成分进行快速、经济、准确的检测对于食品工业的发展具有重要意义。本文阐述了食品快速检测采用的生物技术、化学分析、光谱仪器方法的原理、优点、应用分析以及目前我国快检试剂盒及仪器的研究现状,以供参考。
Rapid detection technology is an important technical support to ensure food safety,and is the basis for implementing legal requirements and scientific supervision.To quickly,economically and accurately detect the harmful factors and main components in food is of great significance to the development of food industry.In this paper,the principle,advantages and application analysis of biological technology,chemical analysis and spectroscopic instrument used in rapid food detection are described,as well as the research status of rapid food detection kits and instruments in China.
