摘要
食品工艺学是食品科学与工程专业学生需要掌握的一门理论与实践相结合的核心课程。为了提高课程教学过程中的教学质量,提高学生的学习积极性和独立思考、分析解决问题的能力,针对目前食品工艺学课程教学现状以及质量监控中存在的问题,对该课程质量监控体系的建立进行了探讨,这对于培养食品专业高素质人才具有重要作用。
The course of Food Technology is a core course combining with theory and practice for students majoring in food science and engineering.In order to improve the quality in teaching process,the enthusiasm of learning,the ability of independent thinking and the competency as to analyzing problems,the quality monitoring system was established.According to the current teaching situation of the course and the existing problems of quality monitoring,the system will play an important role in cultivating high-quality talents with engineering consciousness in food specialty.
