摘要
脯氨酰内肽酶(PEP)作为外源蛋白表达的宿主系统在工业上广泛应用,因其优良的功能特性而具有重要的研究价值。近年来,大量学者对PEP酶学特性、作用机制、异源表达和分子改造等特性及其应用等方面进行了相当多的研究,其在生物学科的应用得到了广泛的重视。本文对于PEP在食品、医药领域的应用进行了探讨,为PEP的高效利用提供理论依据。
Prolyl endopeptidase is a methylotrophic yeast that is widely used in industry as a host system for heterologous protein expression,which is of great value for its excellent function.In recent years,a large number of scholars have carried out considerable research on the enzymatic characteristics,action mechanism,heterologous expression,molecular transformation and application of PEP,and its application in biology has been widely valued.The application of pep in food and medicine is discussed in this paper.
