摘要
为探究葡萄酒中甲醇含量的快速检测方法,本文采用矢量网络分析仪和同轴探头技术,研究频率1~6000 MHz和甲醇含量对葡萄酒介电特性(相对介电常数ε'和介质损耗ε″)的影响规律。结果表明,葡萄酒ε'随着频率的增大而减小,ε″随频率的增大先增大后减小,ε'和ε″均随着甲醇含量的增加而减小;在食品通用频率27 MHz的条件下,ε'和ε″与甲醇的相关系数分别为0.9694和0.9833,具有明显的线性关系,因此可以通过介电参数反应葡萄酒甲醇的质量分数。
In recent years,using coaxial probe to detect dielectric properties is widely used in the detection of liquid composition.In order to explore a rapid non-destructive detection method of methanol content in wine,this paper uses vector network analyzer and coaxial probe,in which studied the effects of frequency 1~6000 MHz and methanol content on the dielectric properties of wine.The results showed that the wine’s ε′decreased with the increase of frequency,meantime,the wine’s ε″increased first and then decreased with the increase of frequency.In addition,both of them decreased with the increase of methanol content.Under the condition of food common frequency 27 MHz,the correlation coefficients of ε′and ε″ with methanol were 0.9694 and 0.9833.Therefore,the mass fraction of methanol in wine can be determined by dielectric parameters.
