摘要
探讨以金银花等药食同源药材为原料制作的多功能金银花凉茶饮料的保质期。将该凉茶饮料分别在加防腐剂冷藏L(F)、不加防腐剂冷藏L、加防腐剂室温S(F)、不加防腐剂室温S四种条件下储存,通过定期检测其绿原酸、氨基酸、黄酮类化合物、固形物、徽生物、色度、亮度,确定其最佳储存条件,进而预测其保质期。从绿原酸、可溶性糖、氨基酸、黄酮、固形物、色度、亮度等品质因素综合分析得出最佳储存时间为8个月。本实验中金银花凉茶饮料在冷藏添加防腐剂条件下储存较佳,确定其保质期为8个月。
To explore the shelf life of a multifunctional honeysuckle herbal tea made from honeysuckle and other herbs.The herbal tea beverage was stored in four conditions:cold storage(with preservative) L(F),cold storage(without preservative) L,room temperature(with preservative) S(F),room temperature(without preservative) S.The best storage conditions were determined by regular detection of its biochemical components,color,brightness and microorganism,and then its shelf life was predicted.From the quality factors of chlorogenic acid,soluble sugar,amino acids,flavonoids,solids,color and brightness,the best storage period was 8 months.In this experiment,honeysuckle herbal tea beverage is better stored under the condition of adding preservatives in cold storage,and its shelf life is determined to be 8 months.
