摘要
感官分析是利用人的感觉器官对食品进行评定,反映出人们对产品质量好坏、喜好程度的重要科学检验方法。食品在通过感官品质评价等检验后才能投放市场。我国是全球最大的水果生产和出口国之一,水果制品多种多样,其中果脯是水果制品中占比较大的一类。目前,果脯产业正处于升级与优化时期,市场占有率的预测需要感官品质分析结果为依据,对感官品质分析在果脯制品中的应用及发展趋势进行综述,以促进果脯工艺的优化及品质的改良。
Sensory analysis is an important scientific inspection method using human sensory organs to evaluate food and reflects people's preference and quality of products.Before being sold in the market,foods should pass the sensory quality evaluation and other integrant inspections.China is one of the world's largest fruit producing and exporting countries.There are many kinds of fruit products,among which preserved fruit is the largest category of fruit products.At present,the candied fruit industry is being upgraded and optimized,and the prediction of market share needs the results of sensory quality analysis.Therefore,this article summarized the application and development trend of sensory quality analysis in candied fruit products to promote the optimization and quality of candied fruits.
