摘要
人工合成甜味剂在食品生产工业中应用广泛,基于对健康的考虑,我国对其使用限量有严格的规定,发展一种灵敏、高效的检测方法对于食品安全监管有重大意义。目前测定人工合成甜味剂的方法主要有光谱法、色谱法及电化学法三类,本文主要对这三类方法的研究进展做简单介绍,并分析总结其优点和缺点,为相关学者的研究提供参考信息。
Artificial sweeteners are widely added in food.The government limits on their addition strictly in consideration of healthy.Therefore,to develop a sensitive and efficient strategy for sweetener detection is significant for food safety monitoring.The detection strategy could be classified into three types:spectroscopy,chromatography and electrochemical methods.The development of these methods was described,and their characterization,which could provide effective information,was summarized.
