摘要
为了筛选益生乳酸菌,从健康婴儿粪便样品中分离得到一株菌株,命名为i797,经形态学特征、16S rDNA基因序列及生理生化特性分析,鉴定为动物双歧杆菌乳亚种(Bifidobacterium animalis subsp.lactis)。该菌株对酸和胆汁均表现出了一定的耐受能力,在模拟人工胃液的环境中培养2 h后,活菌数保持在10^(6) cfu/mL水平;而经1%牛胆汁作用4 h后,菌数还出现了微弱的增加。通过K-B法评价了其对30种抗生素的敏感性,发现其对26种常见抗生素均敏感;发酵速度慢不适于单独作为发酵剂菌株,但是在发酵乳保质期内具有活菌数高且后酸弱的特点,可作为一株潜在的优良益生菌候选菌株进行深入研究。
In order to select probiotic lactic acid bacteria,a predominant strain,named i797,was isolated from fecal samples of healthy infants.This bacterial strain was identified as Bifidobacterium animalis subsp.lactis based on its morphologic properties,16S rRNA sequences,as well as physiological and biochemical characteristics.The strain showed a certain tolerance both to acid and bile.After cultured in the simulated gastric juice environment for 2 h,the viable bacteria number remained at 10^(6) cfu/mL.However,after 4 h treatment with 1%bovine bile,the number of bacteria increased slightly.The sensitivity to 30 kinds of antibiotics was evaluated by K-B method,and this strain was found to be susceptible to 26 antibiotics.The strain with slow fermentation speed is not suitable to be used as starter culture alone,but it has high viable bacteria number during the shelf life of fermented milk,and weak post-acid,can be used as a potential candidate strain of good probiotics for further study.
