摘要
综述了Halloumi干酪的产品特征、起源、消费情况,对其营养特征、感官特征及抗融性进行了分析,论述了巴氏杀菌、加热排乳清、盐渍等加工工艺对Halloumi干酪品质的影响,并对其贮藏条件进行简单的分析,最后对Halloumi干酪未来的发展前景进行了展望。
Halloumi cheese is a semi-hard cheese that originated in Cyprus.It has a compact texture,easy to slice,high protein content,low fat content and rich nutritional value..At present,The consumption area of Halloumi cheese is mainly distributed in the Mediterranean and most of Europe.China's consumption is low and the consumer group is limited.Therefore,studying the quality characteristics and produc⁃tion process of Halloumi cheese has certain practical significance for its promotion in the Chinese market.This article reviews the product characteristics of Halloumi cheese,analyzes its nutritional characteristics,sensory characteristics and resistance to melting,discusses the effects of processing techniques such as pasteurization,heat draining whey,and salting on the quality of Halloumi cheese.A simple analysis of the storage conditions,and finally an outlook on the future development prospects of Halloumi cheese,is intended to provide a reference for the commercial production of Halloumi cheese in China.
