武汉市食品及相关用品安全风险检测结果分析 被引量:3

Analysis of Safety Risk Test Results of Food and Related Supplies in Wuhan

摘要 分析2019年2—11月武汉市食品及相关用品安全基本状况,为预防和控制食源性疾病提供科学依据。按照《食品安全风险监测工作手册》,对食品检验机构资质认定的项目进行检测,按照GB 2760《食品安全国家标准食品添加剂使用标准》等最新食品安全国家标准对结果进行评价,并运用SPSS 18.0等软件对检测结果进行汇总分析。2019年共检测武汉市食品及相关用品693份样品3131项指标,样品合格率和项目合格率分别为97.11%和99.36%;调味品等23类食品未出现不合格,豆制品、粮食加工品、食用农产品等3类食品与餐饮具存在不合格情况;样品不合格的主要原因是微生物指标、食品添加剂、兽药残留、重金属超标,不同来源样品超标率差异有统计学意义(p<0.001)。武汉市食品及食品相关用品检测结果总体状况较好,豆制品、粮食加工品、食用农产品3类食品与餐饮具存在一定安全风险;大肠菌群、脱氢乙酸、铝的残留、氟苯尼考、重金属镉超标,具有一定的安全隐患。建议有关部门加强对食品及食品相关用品的卫生监测,尤其对豆制品、粮食加工品、餐饮具等超标样品及超标检测项目进行重点关注和监管。 It is to analyze the basic safety status of food and related products in Wuhan from February to November 2019,so as to provide scientific basis for the prevention and control of foodborne diseases.According to the Food Safety Risk Monitoring Manual and other items that passed the qualification certification of food inspection institutions,the results were evaluated according to the latest national food safety standards such as GB 2760 National Food Safety Standard for the Use of Food Additives,and the test results were summarized and analyzed by SPSS 18.0 and other software.In 2019,a total of 3131 indexes of 693 samples of food and related articles in Wuhan were tested,and the qualified rates of samples and items were 91.11%and 99.36%,respectively;A total of 23 kinds of food such as condiments were not unqualified,and 3 kinds of food and catering utensils such as bean products,food processing products and edible agricultural products were unqualified;The main reason for the unqualified samples was that the microbial indicators,food additives,veterinary drug residues and heavy metals exceeded the standard,and the difference in the over standard rate of samples from different sources was statistically significant(p<0.001).The results of food and food related products detection in Wuhan were generally in good condition.There were certain safety risks in three kinds of food and catering utensils,such as bean products,food processing products,edible agricultural products,etc.;Coliform bacteria,dehydroacetic acid,aluminum residues,florfenicol and heavy metal cadmium exceed the standard,which had certain safety risks.It was suggested that the relevant departments should strengthen the health monitoring of food and food related articles,especially focus on and supervise the over standard samples such as bean products,food processing products,catering utensils and the over standard testing items.
