摘要
研究海参多肽微丸的制备工艺和海参多肽的抗氧化性。以圆整度为主要指标,采用单因素试验研究空白微丸的最佳制备工艺参数。通过海参多肽对DPPH·、OH·、O_(2)^(-)·的清除率评价海参多肽的抗氧化性。采用扫描电子显微镜、固体紫外和红外光谱的方法对海参多肽微丸进行表征。空白微丸的最佳工艺参数是挤出频率30 Hz,滚圆频率50 Hz,滚圆时间4 min。海参多肽对DPPH·、OH·、O_(2)^(-)·都有清除率,并且对OH·的清除率最高。通过扫描电子显微镜表明海参多肽微丸形态圆整,通过固体紫外和红外光谱分析表明海参多肽均匀分散在辅料中。采用挤出滚圆法制备海参多肽微丸具有一定应用价值和市场前景。
To study the preparation of sea cucumber polypeptide pellets and antioxidation activity of the sea cucumber polypeptide,the optimum technical preparation parameters were obtained by using roundness as key index.Antioxidation activity of the sea cucumber polypeptide was evaluated by the clearance on DPPH·,OH·and O_(2)^(-)·.The pellets were characterized by scanning electron microscope,solid ultraviolet spectroscopy and infrared spectroscopy.The result showed the optimum technical parameters of blank pellets as follow:extrusion velocity of 30 Hz,spheronization velocity of 50 Hz,and spheronization time of 4 min.Sea cucumber polypeptide for DPPH·,OH·and O_(2)^(-)·exhibit clear effect,and the highest clearance was on OH·.The morphology of the sea cucumber polypeptide pellets was round observed by scanning electron microscopy.The sea cucumber peptides were dispersed thoroughly in the adjuvant according to the results of solid ultraviolet spectroscopy and infrared spectroscopy.The preparation of sea cucumber peptide pellets by extrusion spheronization has certain application value.
