摘要
以‘潍县萝卜’为试材,研究常温(15℃)和低温(4℃)贮藏0 d、10 d、20 d、30 d、40 d时‘潍县萝卜’肉质根皮和肉中纤维素、木质素、果糖、葡萄糖、蔗糖和淀粉的含量及蔗糖合成酶(SS)和蔗糖磷酸合成酶(SPS)活性的变化规律,以及纤维素和木质素含量与蔗糖代谢之间的相关性。结果表明,不同贮藏温度下‘潍县萝卜’肉质根的糠心程度及皮和肉中纤维素和木质素的含量均随贮藏时间的延长不断增加;淀粉含量随贮藏时间的延长不断下降;果糖、葡萄糖、蔗糖含量及SS和SPS活性则在贮藏前期(10 d或20 d)显著下降,贮藏中后期(30 d~40 d)又略有增加。与常温贮藏相比,低温贮藏能有效减缓萝卜肉质根中纤维素和木质素的生成,减慢蔗糖和淀粉的降解,促进果糖、葡萄糖含量的增加,增强SS和SPS活性。而相同贮藏方式下,萝卜皮中纤维素、木质素、果糖、葡萄糖、蔗糖和淀粉的含量显著低于萝卜肉,SS和SPS活性则显著高于萝卜肉。相关分析表明,‘潍县萝卜’肉质根纤维素和木质素含量均与蔗糖及淀粉含量呈显著或极显著负相关。以上结果表明,萝卜肉质根(特别是萝卜肉)采后新陈代谢仍然十分活跃,而低温贮藏能有效减缓萝卜肉质根纤维化、木质化;维持高蔗糖和高淀粉含量可能是降低萝卜糠心,延长其贮藏期的有效手段。
‘Weixian radish’was taken as an experimental material to investigate the content of cellulose,lignin,fructose,glucose,sucrose and starch,the change activities of SS,SPS and the correlation between contents of cellulose and lignin and the related indexes of sucrose metabolism in skin and flesh of‘Weixian radish’taproot at room storage temperature of 15℃and low temperature of 4℃for 0 d,10 d,20 d,30 d and 40 d.The results showed that,at different storage temperatures,the degree of hollowing and the content of cellulose and lignin in skin and flesh of‘Weixian radish’taproot increased with the extension of storage time,while the content of starch decreased with the storage time.The content of fructose,glucose,sucrose,and the activities of SS and SPS decreased significantly in the early storage period(10 d or 20 d),and increased slightly in the middle and late storage period(30-40 d).Compared with room temperature storage,low temperature storage could effectively slow down the production of cellulose and lignin in the taproot of radish,reduce the degradation of sucrose and starch,promote the increase of fructose and glucose content,and enhance the activity of SS and SPS.By use of the same storage method,the content of cellulose,lignin,fructose,glucose,sucrose and starch in the skin of‘Weixian radish’taproot was significantly lower than that of radish flesh.The SS and SPS activities were significantly higher than that of radish flesh.The correlation analysis showed that a significantly negative correlation between the content of cellulose,lignin,sucrose and starch content in‘Weixian radish’taproot.The results indicated that the metabolism of radish taproot(especially radish flesh)is still very active after harvest.Low-temperature storage can effectively slow down the fibrosis and lignification of radish taproot;high sucrose and high starch content may be effective to reduce the hollowing of radish chaff and extend its storage period.
