摘要
采用国标及相关测定方法对梵净山人工栽培铁皮石斛的主要营养成分进行了测定,并用氨基酸评分(AAS)、化学评分(CS)来对梵净山人工栽培铁皮石斛氨基酸营养价值进行评价。研究结果表明:梵净山人工栽培铁皮石斛的粗多糖含量高达44%,水浸出物含量高达69.8%,粗纤维含量也较高,为13.5%;同时,其含有多种人体必需矿质元素,包括常量元素Ca(8 750 mg/kg)、K(6 840 mg/kg)、Mg(1 610 mg/kg)以及微量元素Mn(50.2 mg/kg)等;此外,还检测出16种氨基酸,其中包含7种必需氨基酸,占氨基酸总量的44.73%,检测的脂肪酸中含有2种必需脂肪酸(亚油酸、亚麻酸)。由此可知,梵净山人工栽培铁皮石斛具有较好的营养价值及开发应用前景。
The main nutritional components of Dendrobium officinale cultivated in Fanjing mountain were determined by national standard and related determination methods,and the amino acid nutritional value of Dendrobium officinale was evaluated by amino acid score(AAS)and chemical score(CS).The results showed that the crude polysaccharide content was 44%,the water extract content reached 69.8%,and the crude fiber content was 13.5%;At the same time,it contained a variety of essential mineral elements,including major elements Ca(8750 mg/kg),K(6840 mg/kg),Mg(1610 mg/kg)and trace elements Mn(50.2 mg/kg);In addition,16 kinds of amino acids were detected,there were 7 kinds of essential amino acids,accounting for 44.73%.The detected fatty acids contained 2 kinds of essential fatty acids(linoleic acid,linolenic acid).It can be concluded that Dendrobium officinale cultivated in Fanjing mountain had better nutritional value and application prospects.
