摘要
含糖食品在热处理过程中常常会产生糠醛类化合物,当人体摄入达一定剂量后会对健康造成损害,所以探索简单、快速的糠醛类化合物检测方法至关重要。电化学检测方法具有成本低、操作简便、分析时间短和检测限低等优点,是一种理想的糠醛类化合物检测手段。从直接检测法如线性扫描伏安法、循环伏安法、方波伏安法、差分脉冲伏安法、脉冲安培法和间接检测法如化学修饰电极法、衍生法出发,综述电化学方法在糠醛类化合物检测中的研究和应用进展。
The furfural compounds are often produced in the process of heat treatment of foods containing sugar. When the human body ingests a certain dose, it will cause damage to health, so it is very important to explore a simple and fast detection method for furfural compounds. Electrochemical detection method has the advantages of low cost, simple operation, short analysis time and low detection limit. It is an ideal detection method for furfural compounds. The research and application progress of electrochemical detection methods in furfural compounds detection are reviewed, based on direct detection methods such as linear sweep voltammetry, cyclic voltammetry, square wave voltammetry, differential pulse voltammetry, pulsed amperometric detection and indirect detection methods such as chemically modified electrode method and derivative method.
