摘要
目的:建立有腥臭异味动物药水蛭的最佳掩味方案。方法:以腥臭味动物药水蛭为研究对象,利用模糊综合评价法对添加不同掩味配方的水蛭口感进行评价,并以指标成分正己醛在掩味前后的变化验证掩味效果,筛选最佳掩味方案。结果:腥臭味动物药水蛭的最佳掩味方案为向水蛭粉末中加入药材质量100%的β-环糊精,密闭研磨15 min。结论:模糊数学可用于筛选腥臭味动物药的掩味方案,β-环糊精作为掩味剂能有效掩盖动物药材腥臭味。
Objective:To optimize the best scheme masking the smell of the smelly animal medicinal Hirudo.Methods:Taking the stink animal medicinal materials Hirudo as a research object,the fuzzy math comprehensive evaluation method was used to evaluate the taste of Hirudo with different masking formulas,and the taste masking effect was verified by the change of index component n-hexanal before and after taste masking,then the best taste masking scheme was selected.Results:Adding 100%of the medicinal weight of beta-cyclodextrin to the leech powder and grinding it in a closed condition for 15 minutes,which is the best masking scheme for the stench animal medicinal materials Hirudo.Conclusion:Fuzzy mathematics can be used to screen the taste-masking scheme of animal medicinal materials with strong stench.The beta-cyclodextrin as a taste-masking agent can effectively mask the animal-odor medicinal materials.
