摘要
试验旨在研究不同饲喂水平对巴美肉羊生长性能、屠宰性能、肉品质和肌肉氨基酸组成的影响,选用体重为(23.37±2.04)kg的巴美肉羊母羔18只,采用单因素完全随机区组设计,将试验羊随机分为3组,每组6个重复,每个重复1只。按照自由采食(自由采食组)、自由采食量的85%(低限饲组)和自由采食量的65%(高限饲组)进行饲喂,预试期10 d,正试期80 d。结果表明:试验羊平均日增重随饲喂水平的提高而增加(P<0.05);高限饲组的宰前活重和胴体重低于低限饲组和自由采食组(P<0.05),后两组间差异不显著;各组耗料增重比和屠宰率差异不显著;各组肌肉pH、滴水损失、熟肉率和肌肉蛋白质含量均无显著差异,自由采食组肌内脂肪(IMF)含量高于低限饲组和高限饲组(P<0.05);自由采食组肌肉中必需氨基酸、鲜味氨基酸和总氨基酸含量高于低限饲组和高限饲组(P<0.05)。由此可见,不同饲喂水平对试验羊耗料增重比、屠宰率和肉品质无显著影响,但自由采食可显著提高试验羊日增重、肌内脂肪含量和肌肉中氨基酸含量。
This experiment was conducted to investigate the growth performance,slaughter performance,meat quality and amino acid profile in muscle of Bamei mutton sheep.Eighteen healthy Bamei mutton sheep weighing(23.37±2.04)kg were selected to be randomly divided into 3 groups:one group fed ad libitum,and the other two groups fed either 85%or 65%of ad libitum.There were 6 replicates in each group and 1 sheep for each replicates.The experiment lasted for 80 d.The results showed that different feeding levels had significant effects on average daily gain among three groups(P<0.05),and no significant difference in feed to gain ratio(P<0.05).There was no significant differences were dressing percentage among three groups;live weight before slaughter and carcass weight in the IR65 group was lower than that in other two groups(P<0.05),and no obvious difference was found between AL group and IR85 group;There was no significant differences were pH value,drip loss,cooked meat percentage and protein content in muscle among three groups;Amino acid profile and intramuscular fat content in muscle of the AL group was higher than that in other two groups(P<0.05).The results indicate that AL group have better muscular amino acid profile and intramuscular fat content than other two groups,and no significant differences were feed conversion ratio,dressing percentage,protein content in muscle and meat quality among three groups.
