摘要
探讨了食品中常见氧化剂、还原剂及金属离子对栀子黄色素稳定性的影响。以栀子黄色素为材料,栀子黄色素色素损失率为表征指标,改变不同食品中常见氧化剂、还原剂及其浓度,改变金属离子种类,通过紫外可见分光光度计对处理后的栀子黄色素溶液进行全波长扫描,计算栀子黄色素色素损失率。试验所得数据通过Excel软件进行统计分析,使用LSD和SPPSS19.0对时间结果进行多重比较、显著性分析和方差分析。结果表明氯化钠、氯化钙、硫酸铜和硫酸锌对栀子黄色素稳定性影响不大,0.2%金属溶液处理12 h后色素损失率值介于6.0-7.0%之间;浓度为0.2%Fe^(2+)、Fe^(3+)溶液处理12 h后栀子黄色素色素损失率分别为69.3%、78.3%;栀子黄色素在浓度为0.1%、0.2%、0.3%的亚硫酸钠和亚硝酸钠还原剂处理12 h条件下,色素损失率约为15%,亚硫酸钠和亚硝酸钠两种还原剂浓度和处理时间对栀子黄色素色素损失率的影响不显著,无统计学意义(P>0.05)。因此Fe^(3+)和Fe^(2+)对栀子黄色素稳定性有较大影响,栀子黄色素在食品中常见氧化还原剂条件下具有一定的稳定性。因此,在栀子黄色素提取生产、运输和使用等过程中要避免使用铁制设备或溶液,避免与高浓度氧化剂接触,以保证栀子黄色素稳定性和颜色保真。
To investigate the effect of oxidant,reducing agent and metal ions on the stability of gardenia yellow pigment.Using gardenia yellow as material and gardenia yellow pigment loss rate as the characterization index,the common oxidants,reducing agents and their concentrations in different foods were changed,and the kinds of metal ions were changed.The treated gardenia yellow solution was scanned by ultraviolet visible spectrophotometer at full wavelength,and the loss rate of gardenia yellow pigment was calculated.The data were statistically analyzed by Excel software.LSD and sppss19.0 were used for multiple comparison,significance analysis and variance analysis.The results showed that sodium chloride,calcium chloride,copper sulfate and zinc sulfate had little effect on the stability of gardenia yellow.The pigment loss rate of gardenia yellow was between 6.0%and 7.0%after being treated with 0.2%Fe 2+and Fe 3+Solutions for 12 h,69.3%and 78.3%respectively;the pigment loss rate of gardenia yellow was 0.1%,0.2%,0.3%sodium sulfite and sodium nitrite reducing agent for 12 h The results showed that the pigment loss rate of gardenia yellow pigment was about 15%.The concentration of sodium sulfite and sodium nitrite and the treatment time had no significant effect on the pigment loss rate of gardenia yellow pigment(P>0.05).Fe 3+and Fe 2+have a great influence on the stability of gardenia yellow,and gardenia yellow has a certain stability under the condition of common redox in food.Therefore,in the process of extraction,transportation and use of gardenia yellow pigment,iron equipment or easy to be used should be avoided,and contact with high concentration oxidant should be avoided to ensure the stability and color fidelity of gardenia yellow pigment.
