四种柑橘果皮主要活性物质测定和抗氧化能力对比研究 被引量:14

摘要 以四种柑橘果皮(砂糖橘、脐橙、芦柑和蜜桔)为原料,测定柑橘皮中总多酚、总黄酮和总三萜的含量,采用DPPH法、ABTS法、清除羟自由基法对柑橘果皮甲醇提取物的抗氧化活性进行测定,并建立TOPSIS数学模型对柑橘果皮中的活性物质和抗氧化能力进行综合评定。结果表明:四种柑橘果皮的总多酚、总黄酮、总三萜含量存在显著性差异;其中柑橘果皮的总多酚含量为16.05~40.68 mg GAE/g,总黄酮含量为145.2~191.1 mg RE/g,总三萜含量为5.39~10.88mg UAE/g,并以芦柑皮中的总多酚、总黄酮、总三萜含量最高。四种柑橘果皮清除DPPH·-、ABTS·+、羟基自由基能力分别为5.025~7.498、6.40~7.98、6.78~11.32 mg Vc eq./g。TOPSIS分析结果表明芦柑皮综合抗氧化能力最强。 In this paper,the contents of antioxidant components and antioxidant activity in four varieties of citrus peels(sugar orange,navel orange,ponkan and tangerine mandarin)were detected and analyzed.The contents of total polyphenols(TP),total flavonoids(TF)and total triterpenes(TT)in citrus peel were determined using UV-Vis spectrophotometry method and the antioxidant activity was evaluated through DPPH,ABTS and hydroxyl radicals scavenging capacity.TOPSIS mathematic model was established to comprehensively evaluate the antioxidant capacity.The results showed that the contents of TP,TF and TT were significantly differed in the four citrus peels.The TP and TF contents were in the range of 16.05~40.68 mg GAE/g and145.2~191.1 mg RE/g respectively,and triterpenes content ranged from 5.39 to 10.88 mg UAE/g.The highest TP,TF and TT content were all found in ponkan peel.The three antioxidant activities of DPPH·-,ABTS+·and OH·-scavenging ability in citrus peels were 5.025~7.498,6.40~7.98 and 6.78~11.32 mg Vc eq./g,respectively.By TOPSIS analysis,Ponkan peel was found to have the highest antioxidant capacity.
