摘要
在我国冷链技术不断发展完善的同时,人们对冷冻食品的需求量也在不断提高。抗冻剂作为一种具有改善食品冷冻特性的添加剂也有了越来越广泛的应用。本文列举了3类食品工业中常用的抗冻剂,并对抗冻剂的作用机理及在食品工业中的应用进行概述,以为研究人员后续对抗冻剂开展进一步研究提供参考。
With the continuous improvement of the cold chain in China,the demand for frozen food increases rapidly.Antifreezer,as a kind of food additive which can improve the freezing property of food,has been used more and more widely.In this paper,the common three kinds of food antifreezers are listed,and the mechanism and application of these antifreezers are also explained,so as to provide some reference for subsequent researchers to carry out further research on the relevant content.
