摘要
鸡蛋的气室对于鸡蛋的保存、评价鸡蛋的新鲜度有重要应用价值,也为胚胎发育提供氧气。对于蛋气室的形成原因,普遍接受的是热胀冷缩理论。探索表明,气室的形成除了跟热胀冷缩有关外,还跟气压、壳膜结构有关。弄清楚蛋气室形成的原因,对于气室的利用及制造人工气室、鸡蛋保鲜等方面具有重要参考价值,对于进一步了解生物膜的结构与作用有重要意义。
Egg chamber can be utilized to evaluate the grade of freshness of chick egg.It can provide chick embryo with oxygen during hatching.About the reason for the formation of egg chamber,it is generally accepted that the theory of heat expansion and cold contraction.The exploration showed that the formation of the air chamber is not only related to thermal expansion and cold contraction,but also to air pressure and shell membrane structure.It is of great significance for the usage to understand the mechanism for the formation of egg chamber.It is also important for us to further study the structure and function of biofilm.
