摘要
杂粮富含营养成分,既有丰富的蛋白质、淀粉、脂肪,也有众多矿物质、维生素等,且富含功能性成分,特别是含有较高的抗氧化物质及膳食纤维,使其在营养保健品开发领域具有其他种类作物不可比拟的独特前景。我国杂粮种类丰富,随经济持续快速发展和人民生活水平不断提高,杂粮的营养保健功能日益凸显,市场潜力巨大。但是,我国杂粮产业发展相对滞后,面临挑战。我们综述了4种主要谷物杂粮,包括:高粱、小米、大麦和燕麦,在分析其营养价值的基础上,同时对发展现状、存在的问题及对策进行了讨论。
Coarse cereals are rich in nutrients,such as protein,starch,fat,minerals,vitamins and so on.They are also rich in functional components,especially high antioxidant substances and dietary fiber,which make them have unique prospects in the development of nutrition and health products that other kinds of crops can not match.With the rapid economic development and the continuous improvement of people's living standards,the nutritional and health functions of coarse cereals are increasingly prominent,and the market potential is huge.However,coarse cereals industry in our country is relatively backward,also faces many challenges.In this paper,we summarized four kinds of main cereals,including sorghum,millet,barley and oats.Based on the analysis of their nutritional value,the development status,existing problems and countermeasures were discussed.
