电子束辐照和真空包装对特晚熟龙眼果实贮藏期品质的影响 被引量:2

Effects of electron beam irradiation and vacuum packaging on storage qualities of fruits of extremely late maturing longan

摘要 为了解电子束辐照和真空包装等处理对特晚熟龙眼果实外观和内在品质的影响,对龙眼果实分别进行0.2 kGy电子束辐照和真空包装处理,以未处理为对照,放置于30℃条件下,测定果皮色度、商品可接受率和总可溶性糖、可溶性固形物、可滴定酸度和维生素C等含量的变化.结果显示,相对于对照,两个处理均能显著抑制总可溶性糖、维生素C含量和糖酸比等的降低以及可滴定酸含量的增加(P<0.05);处理第6天时,电子束辐照处理的果肉可溶性固形物含量和果皮L*值、b*值分别为22.13%和48.81、21.79,均优于对照和真空包装处理,第6天时电子束辐照处理、真空包装处理和对照的商品可接受率分别为50.56%、41.11%和30.00%.本研究表明0.2 kGy电子束辐照处理比真空包装处理的贮藏效果更好,将龙眼果实货架期从4 d延长至6 d;电子束辐照安全高效,适合在龙眼贮运保鲜中推广应用.(图4表1参29) To study the effects of electron beam irradiation and vacuum packaging on the appearance and intrinsic quality of extremely late maturing longan,the longan fruits were treated with 0.2 kGy electron beam irradiation and vacuum packaging,respectively,and stored at 30°C,with no treatment as a control.The changes in peel color,commercially acceptable fruiting rate,total soluble sugar,soluble solids,titratable acidity,and vitamin C content during storage were determined.The results showed that,compared with the control,both treatments significantly inhibited the decrease in total soluble sugar,vitamin C content,and sugar-acid ratio but increased the titratable acid content(P<0.05).On the 6th day of storage after treatment,the content of soluble solids was 22.13%,and the L*value and b*value of the skin of fruits treated by electron beam irradiation were 48.81%and 21.79%,respectively.These values were superior to those of the control and vacuum packaging groups;the acceptance rates of the products for electron beam irradiation,vacuum packaging,and control were 50.56%,41.11%,and 30.00%,respectively.Accordingly,the treatment with 0.2 kGy electron beam irradiation had a more effective storage effect than vacuum packaging treatment,and the shelf life of longan fruit was extended from 4 days to 6 days by irradiation.Thus,electron beam irradiation is safe,efficient,and suitable for application in longan storage and transportation.
