摘要
工业微生物在发酵过程中会面临不同类型的胁迫作用,如温度胁迫、酸碱胁迫、盐胁迫和氧化胁迫等,这些胁迫可能会影响细胞的正常生理功能,进而影响微生物生长与目标产物合成。工业发酵过程中原料或代谢产物中含有一定质量浓度的乙酸,其对微生物具有较强的毒性作用,已成为限制发酵工业生产的关键因素。研究表明:微生物具有相关的耐受机制来抵抗乙酸胁迫,因此以酿酒酵母、大肠杆菌和谷氨酸棒状杆菌为例,系统地对乙酸毒性机理及微生物乙酸耐受性的相关研究成果和进展进行综述,为乙酸耐受菌株的分子构建和改造提供重要的理论依据,也为提高工业生产菌株适应性提供指导。
Industrial microorganisms will meet multiple stresses during fermentation process,such as temperature stress,acid-base stress,salt stress and oxidative stress,etc.These stresses may affect the normal physiological functions of cells,thereby affecting the growth of cells and the synthesis of target products.In the industrial fermentation process,a certain concentration of acetic acid is contained in the raw materials or metabolites,which has a strong toxic effect on microorganisms and has become a key factor limiting the industrial microbial production.Previous studies have shown that microorganisms have related mechanisms to resist acetic acid stress.Here,taking Saccharomyces cerevisiae,Escherichia coli,and Corynebacterium glutamicum as examples,recent advances in the results and progress of the toxicity mechanism of acetic acid and acetic acid tolerance of the microorganisms were critically reviewed.The review provided an important theoretical basis for the molecular construction of acetic acid resistant strains and also provided guidance for improving the adaptability of industrial production strains.
