摘要
采用顶空固相微萃取-气相色谱-质谱联用法对热处理前后金鲳鱼鱼肉、鱼皮和体表黏液的挥发性成分进行分析鉴定。结果表明:从生鲜金鲳鱼鱼肉、鱼皮和体表黏液中共鉴定出57种挥发性成分,包括8种醇类、13种醛类、2种酮类、2种酯类、30种烃类和2种其他类物质。经过100℃加热处理后,从热处理金鲳鱼鱼肉、鱼皮和体表黏液中共鉴定出挥发性成分60种,包括8种醇类、14种醛类、5种酮类、3种酯类、25种烃类和5种其他类物质。
The volatile components in the flesh,skin and body surface mucus of golden pompano before and after heat treatment were analyzed by headspace solid phase microextraction and gas chromatography mass spectrometry.The results showed that 57 volatile components were identified from the flesh,skin and body surface mucus of golden pompano,including 8 alcohols,13 aldehydes,2 ketones,2 esters,30 hydrocarbons and 2 other substances.After heat treatment at 100℃,60 kinds of volatile components were identified from the flesh,skin and body surface mucus of golden pompano,including 8 kinds of alcohols,14 kinds of aldehydes,5 kinds of ketones,3 kinds of esters,25 kinds of hydrocarbons and 5 kinds of other substances.
