摘要
为开发荷叶蛋白资源,提高荷叶的附加值。研究以荷叶为原料,采用响应面法优化酶解荷叶多肽的工艺条件。对碱性蛋白酶添加量、酶解时间、酶解温度、酶解p H这4个因素进行单因素试验,通过响应面法对荷叶多肽的酶解工艺进行优化,获得最佳酶解工艺条件为:加酶量2000 U/g,酶解p H 8.78,酶解温度54.9℃,酶解时间4.9 h。该优化工艺合理可行,具有较高的应用价值。
In order to develop the lotus protein resource and improve the added value of lotus.The lotus leaf was used as a raw material,and the enzymatic hydrolysis condition was optimized by the response surface method.The effects of alkaline proteases addition,enzymolysis time,enzymatic hydrolysis temperature and enzymatic hydrolysis p H by single factor experiments were studied,the optimal enzyme solution were enzyme concentration of 2000 U/g,p H 8.78,enzymatic hydrolysis at 54.9℃,and enzymolysis time of 4.9 h.The optimized technology was feasible,and had high application value.
