摘要
研究低温等离子体处理条件对金鲳鱼的杀菌作用及其品质影响。采用60,70和80 k V电压处理金鲳鱼1,2和3 min,分析处理前后鱼肉的菌落总数、色差、p H、水分含量、挥发性盐基氮(TVB-N)和TBARs值变化。结果表明:随着低温等离子体处理电压升高、处理时间延长,鱼肉的菌落总数、p H、b^*值和TVB-N值逐渐降低,L^*值和TBARs值逐渐升高,处理前后鱼肉中水分含量无明显变化。经80 k V处理3 min,鱼肉的菌落总数和TVB-N值分别下降1.40 lg(CFU/g)和2.60 mg/100 g,L^*值和TBARs值分别升高22.42和0.073 mg/100 g。低温等离子处理能够有效减少鱼肉中微生物数量,减缓鱼肉变黄,增加鱼肉亮度,改善鱼肉色泽,维持鱼肉含水量。因此,低温等离子体处理对金鲳鱼具有良好的杀菌效果,能够维持鱼肉的良好品质,在金鲳鱼杀菌保鲜领域具有一定应用前景。
In this paper,the effects of cold plasma treatment conditions on the bactericidal action and quality of Trachinotus ovatus were studied.The packaged Trachinotus ovatus were treated with 60,70 and 80 k V for 1,2 and 3 min.Changes of the total number of colonies,color,p H,moisture content,volatile base nitrogen(TVB-N)and TBARs of fish before and after treatment were analyzed.The results showed that as the increase of cold plasma treatment voltage and time,the total number of colonies,p H,b^*value and TVB-N value were decreased gradually,and L^*value and TBARS value were increased gradually.When samples were treatment with 80 k V for 3 min,the total number of colonies and TVB-N values of fish were decreased by 1.40 log(CFU/g)and 2.60 mg/100 g,respectively,while the L^*value and TBARS value were increased by 22.42 and 0.073 mg/100 g,respectively.There was no significant change in the moisture content of fish before and after cold plasma treatment.Cold plasma treatment could effectively reduce number of microorganisms in fish,protein degradation and the yellowness,increase the brightness,improve the color and maintain the moisture content of fish.Therefore,cold plasma treatment could limit bacteria growth effectively and maintain their quality.It had a certain application prospectin the sterilization and preservation of Trachinotus ovatus.
