摘要
蘑菇又名蕈或菌子,是一种大型真菌,有丰富的营养价值,我国目前存在的野生菌有500余种,约400多种野生菌可经过高温或特殊处理后食用,其中无法通过高温降解、毒性极强可致死的约有30多种[1]。由于毒蘑菇形态上与可食用蘑菇极为相似,因此误食有毒蘑菇成了中毒的主要原因,导致每年都有大量蘑菇中毒的相关报道。一种毒蘑菇中可能不止包含一种毒素[2],蘑菇中毒不仅临床表现极其复杂,其毒理学机制更为复杂,约95%毒蘑菇中毒不能明确其毒素。
Mushroom poisoning is a kind of acute disease with the highest mortality in food poisoning in China. The common poisonous mushroom species are Amanita, Boletus, Psilocybe, Cortinarius, Gyromitra, Clitocybe, Coprinopsis, Omphalotus etc. Mechanisms of poisoning are very complex, which have not been fully understood. The types of mushroom, the variety of toxins, and the mechanisms of poisoning were summarized in this paper. It may provide reference for basic research and clinical emergency treatment.
