摘要
中式冷菜是中国传统饮食文化的重要组成部分,中式烹饪技艺发展至今已经突破了传统的炝、拌、腌、冻等烹饪方法,而是根据现代的视觉审美、口味、食材等饮食文化的变迁,实现了中式冷菜新工艺、新手法、新食材等的创新发展,以满足人们多样化的饮食需求。本文在明确冷菜重要性的基础上,探索中式冷菜制作工艺创新方法,以促进中式冷菜更加美味、更有内涵和生命力。
Chinese cold dishes are an important part of Chinese traditional food culture.The development of culinary skills has broken through traditional cooking methods such as soaking,mixing,pickling and freezing.It is based on modern visual aesthetics,tastes,ingredients and other food culture.The changes have realized the innovative development of new techniques,new techniques,new ingredients,and new cooking of Chinese cold dishes to meet people’s diverse dietary needs.On the basis of clearly paying attention to the importance of cold dishes,this article explores innovative methods of making Chinese cold dishes in order to make Chinese cold dishes more delicious,connotative and vital.
