摘要
本试验对植物乳杆菌的冻干保护剂进行了筛选,同时对冻干工艺进行了优化。结果表明:最佳冻干保护剂配方是奶粉20%,海藻糖10%,甘油2%,低聚木糖5%;最佳的预冻温度和时间分别是-70℃,6 h;菌泥与水不同比例混合冻干后,随着水分的增加,植物乳杆菌的存活率缓慢下降,建议水与菌泥最佳比列为0.5:1。经过冻干保护剂和冻干条件的优化,植物乳杆菌的存活率达到80%以上。
The experiment was used to select the best freeze-dried protectants and the technology for the vacuum freeze-drying of Lactobacillus Plantarum.The results showed that the best freeze-dried protectants were as follows:20%milk powder,10%trehalose,2%glycerol and 5%xylo-oligosaccharides(XOS).The best pre-freezing temperature was-70℃,and the best pre-freezing time was 6 hours.The water and Lactobacillus plantarum sludge mixed in different proportions,the survival rate of Lactobacillus Plantarum decreased slowly as the water increasing after freeze-dried.It was suggested that the best ratio of water to sludge should be 0.5:1.The survival rate of Lactobacillus plantarum was more than 80%after optimization of freeze-drying protectant and freeze-drying conditions.
