锡林浩特地区生鲜牛乳中微生物的调查与分析 被引量:1

摘要 通过对内蒙古锡林浩特市部分地区售卖的散装生鲜牛乳中的微生物进行检测,旨在分析季节及散卖生鲜牛乳对锡林浩特市生鲜牛乳质量的影响,以期为锡林浩特市散装生鲜乳销售环节的卫生质量安全监管及后期整顿提供基础数据。于2019年每个季节分别采集锡林浩特市不同片区4家散装售奶户生鲜牛乳,共16批次72份。通过国家标准方法,对散装生鲜牛乳中菌落总数、大肠菌群、金黄色葡萄球菌、沙门氏菌进行测定。72份样品菌落总数平均值为1.19×106 CFU/mL,基本符合国家标准,1号散户夏季生鲜牛乳菌落总数达到2.38×106 CFU/mL,已超过国家标准规定限值;大肠菌群平均值为4.98×104 CFU/mL,4家生鲜牛乳中的大肠菌群最高值均出现在夏季;1份秋季样品检测出金黄色葡萄球菌,数值为24 CFU/mL;所有样品均未检测出沙门氏菌。结果表明,2019年内蒙古锡林浩特市散装生鲜牛乳售卖环节存在一定的微生物污染问题,季节对生鲜牛乳中的菌落总数和大肠菌群有一定影响,其中菌落总数影响较大。 Through the detection of microorganism in bulk fresh milk sold in some areas of Xilinhot city,Inner Mongolia,the purpose of this paper was to analyze the influence of season and bulk milk on the quality of fresh milk in Xilinhot city,in order to provide reference for health quality safety supervision and later rectification in the sales of bulk fresh milk in Xilinhot city.In 2019,72 fresh milk samples of 16 batches were collected from 4 bulk milk sellers in different areas of Xilinhot.The total number of colony,coliform,Staphylococcus aureus and Salmonella in bulk fresh milk were determined by national standard method.The average number of colonies of 72 samples was 1.19×106 CFU/mL,which basically met the national standard.The total number of colonies of fresh milk of No.1 retail in summer reached 2.38×106 CFU/mL,which exceeded the national standard limit.The average number of coliforms was 4.98×104 CFU/mL,and the highest number of coliforms in four fresh milk appeared in summer.Staphylococcus aureus was detected in one autumn sample,which was 24 CFU/mL;no Salmonella was detected in all samples.The results showed that there were some microbial pollution problems in the sale of fresh bulk milk in Xilinhot city,Inner Mongolia in 2019.Season has a certain impact on the total number of colonies and coliform bacteria in fresh milk,among which the total number of colonies has a greater impact.
