YANGZHOU City,located at the intersection of the Beijing-Hangzhou Grand Canal and the Yangtze River,was an important port in ancient China since the Tang Dynasty(618-907)as the waterways were convenient for trading.During the Qing Dynasty(1644-1911),the thriving salt business brought wealth to Yangzhou,giving rise to extravagance in food per se,as well as the pomp and ceremony for enjoying the dainties.
