摘要
以呋喃酮、甲基环戊烯醇酮、乙基麦芽酚、麦芽酚和乙基环戊烯醇酮5种具有焦甜香的香原料为研究对象,通过σ-τ图法对以上5种香原料的二元、三元、四元混合物所展现出的协同作用进行研究。研究表明,上述5种焦甜香原料的二元、三元、四元混合物在混合后普遍表现出低加成作用效果,部分表现出加成作用为主。通常在低香气强度下的香料混合物易表现出协同作用效果,当τ值减小时,相互作用效果有从协同作用向低加成作用变化的趋势。此外,部分香原料在较高香气强度下与低香气强度下的混合也会达到协同作用效果。
In this experiment,the caramel aroma materials including furanone,methyl cyclopentenolone,ethyl maltol,maltol and ethyl cyclopentenolone were studied.The synergistic effect of binary,ternary and quaternary mixtures of the above five kinds of caramel aroma materials were studied byσ-τmethod.The results showed that the binary,ternary and quaternary mixtures of the above five kinds of aroma raw materials generally provided the effect of low addition,and some of them mainly showed the effect of addition.The mixture with low aroma intensity usually showed the effect of synergism.when the value ofτdecreased,the interaction effect tended to change from synergism to low addition.In addition,the mixture of some aroma materials under high aroma intensity and low aroma intensity might show a synergistic effect.
