摘要
燕窝被视为中国一种传统名贵食品,在国内外引起广泛关注。文章对燕窝来源、营养成分、功能特性等问题进行了综述,其中燕窝功能主要包括抗氧化、调节免疫、延缓衰老、抗病毒、抑制血凝等,以期为后续燕窝功能性研究提供理论指导。
Edible bird’s nest(EBN)is regarded as a traditional Chinese rare food which attracts numerous attentions at home and abroad.The sources,active substances,functions of EBN are reviewed.The functional research progress of EBN,mainly included antioxidant,immune improvement,anti-aging,resistance to the virus,inhibition of blood clotting,and provided the direction for the functional research of EBN in the future.
