摘要
[目的]阐明活性氧代谢和膜脂代谢在果蔬采后病害发生中的作用及其调控机制,为控制果蔬病害发生及提高果蔬品质、延长保鲜期提供依据。[方法]对国内外文献进行归纳总结。[结果]综述了果蔬采后病害发生与细胞内活性氧的产生、活性氧清除系统、膜脂降解相关酶、膜磷脂组分和膜脂脂肪酸组分等的关系。[结论]维持细胞膜结构的完整性有助于提高果蔬的抗病能力和耐贮性。
[Purpose]To study the effects of reactive oxygen species and membrane lipid metabolism in the occurrence of diseases after fruits and vegetables are harvested and its regulatory mechanism,in order to provide a basis for controlling disease occurrence,improving the quality,and extending the shelf life of postharvest fruits and vegetables.[Method]The literatures from home and abroad were reviewed and summarized.[Result]The relationship between the disease occurrence in postharvest fruits and vegetables and the production of reactive oxygen species in cells,active oxygen scavenging system,the enzymes associated membrane lipids degradation,and the components of membrane phospholipids,and fatty acids were reviewed.[Conclusion]Maintaining the integrity of cell membrane structure helps to improve disease resistance and prolong shelf life of postharvest fruits and vegetables.
