摘要
多酚氧化酶是一种含铜的金属酶,广泛存在于动物、植物、细菌和真菌中。多酚氧化酶催化的褐变反应对植物的采后加工和贮藏过程具有深刻影响,其对生物体发挥的免疫作用、生物和非生物胁迫也有着重要意义。该文综述了国内外多酚氧化酶提取和纯化的研究进展,并对其理化性质进行比较,总结了高活性多酚氧化酶的分离纯化方法,以期为深入认识多酚氧化酶在酶促褐变和植物生理生化中的作用提供参考。
Polyphenol oxidase is an ubiquitous copper metalloprotein in many plants, animals, bacteria and fungi. The browning reaction catalyzed by polyphenol oxidase has a profound impact on the post-harvest processing and storage process of plants, and it is also of great significance to the immune effect and biological and non-biological stress of organisms. This paper reviews the research progress of extraction and purification of polyphenol oxidase at home and abroad, compares its physicochemical properties, and summarizes the separation and purification methods of highly active polyphenol oxidase, in order to provide references for further understanding of the role of polyphenol oxidase in enzymatic browning and plant physiology and biochemistry.
