摘要 简要分析乌梅的香韵类型和所需单体香气,在此基础上研制出系列式的乌梅香精。采用积木式的调香技术,构建主体香精积木、熏梅感积木、梅肉感积木、梅汁感积木和梅干感积木。香精和积木之间能单独使用或搭配使用。该产品主体的体香自然、柔和,香气方向特征性明显,能方便地应用到终端产品中,顺应市场需求。 The aroma types and monomer aroma of darkplumfruit were analyzed briefly.On this basis,the research and development of a series of darkplumfruit flavor were conducted.Using the building block type flavoring technology,the main flavor building blocks,smoked plum feeling building blocks,plum pulp feeling building blocks,plum juice feeling building blocks,dried plum feeling building blocks were established.The flavors and building blocks can be used alone or in combination.The product had natural and gentle fragrance,obvious characteristics of aroma direction,which is convenient to be used in food products and complies with market demand.
