摘要
作为一种高效、快捷、绿色的干燥技术,红外辐射被广泛应用于稻谷干燥与加工。本研究对比红外辐射和自然通风对稻谷加速陈化储藏28 d过程中脂质和淀粉性质的变化。稻谷储藏过程中,游离脂肪酸含量均呈现上升趋势,但红外辐射处理后稻谷游离脂肪酸含量上升程度比自然通风处理的稻谷降低25.5%,且红外辐射对脂肪酶、脂肪氧化酶活性均有抑制作用;红外辐射处理的稻谷储藏28 d后淀粉峰值黏度上升7.7%,提高了淀粉颗粒膨胀能力,且α-淀粉酶活性下降程度最小,仅为5.4%;而自然通风处理的稻谷各指标差异不显著。结果表明,红外辐射处理可以改善稻谷品质,抑制稻谷陈化。
As an efficient,fast and green drying technology,infrared radiation heating method can be used in rice drying and processing.Thelipid and starch propertieschangesof the paddy rice heated with infrared radiationandnatural ventilation accelerated aging for 28 days were determined in this paper.The results indicated that the free fatty acid values of rice showed an upward trend in the storage process,but the increase degree of free fatty acid values of rice after infrared radiation treatment was 25.5%lower than that of rice after natural ventilation treatment,and the infrared radiation inhibited the activities of lipase and fat oxidase.The peak viscosity of irradiated riceincreased by 7.7%after 28 days of storage,which improved the expansion capacity of starch granules.Furthermore,the reduced degree of α-amylase activity was only 5.4%,which was significantly lower than that of controlsamples.However,there was no significant difference in natural ventilation.The results indicated that infrared radiation treatment could improve rice quality and inhibit the aging of rice.
