Handmade old ham cooked meat products had a wide market in the three provinces of Northeast China,Shandong and Tianjin.The formula,processing technology,operation points,quality indicators of mass production of handmade old ham were introduced,and the processing points to retain the original taste and shape of the product were discussed emphatically.
