摘要
目的了解北京市通州区零售散装即食食品的食源性致病菌的污染状况,为食源性疾病的预防和控制提供科学依据。方法按照《北京市食源性致病菌及其致病因子监测工作手册》开展采样、运输及实验室检测。以描述性统计分析不同食品种类、不同采样环节食源性致病菌检出情况。结果2014-2018年监测493份散装即食食品食源性致病菌总体检出率3.85%(19/493),单核细胞增生李斯特菌检出率为3.04%(15/493),金黄色葡萄球菌检出率为0.63%(2/317)、蜡样芽孢杆菌检出率为0.39%(1/259)、沙门菌检出率为0.26%(1/386),4种致病菌检出率之间有统计学意义(χ^2=17.641,P=0.01)。不同食品种类食源性致病菌检出率差异无统计学意义(χ^2=3.950,P=0.401)。结论北京市通州区5类散装即食食品中均检出食源性致病菌,主要高危食品是熟肉制品,主要食源性致病菌是单核细胞增生李斯特菌,对此类高风险的食品应加强监测和监管,预防和减少食源性疾病的发生。
Objective To understand the contamination status of foodborne pathogens in the selling unpackaged instant food in the Tongzhou District of Beijing,and to provide evidence for the prevention and control of foodborne diseases.Methods Sampling,transportation and laboratory testing was carried out in accordance with the"Beijing Food-borne Pathogens and Their Pathogenic Factors Monitoring Manual".Statistical analysis of the detection rate of foodborne pathogens in different food types and sampling stages.Results The total detection rate of 493 selling unpacked instant food was 3.85%(19/493),and the detection rates of Listeria monocytogenes,Staphylococcus aureus,Bacillus cereus and Salmonella were 3.04%(15/493),0.63%(2/317),0.39%(1/259)and0.26%(1/386).The detection rates of pathogenic bacteria in different ready-to-eat foods were significantly different(χ^2=17.641,P=0.001).There was no significant difference in the detection rate of foodborne pathogens among different food types(χ^2=3.950,P=0.401).Conclusion Foodborne pathogens were detected in five types of ready-to-eat bulk foods,and the primary contaminant is listeria monocytogenes.The commonly contaminated food was cooked meat products in the Tongzhou District of Beijing,therefore,high-risk food should be monitored and supervised to prevent and reduce the occurrence of foodborne diseases.
