摘要
前期研究发现,低温环境下,电场处理下的水果其代谢强度发生明显变化,且代谢强度随着电场强度的变化存着这明显差异。具体表现在:低电场强度(30 mv^100 v)条件下,乙烯释放量明显降低,且代谢强度较低;而高电场强度(500 V^1000 V)条件下,乙烯释放量明显增多,代谢强度明显升高。本文通过在冰箱内增加电场释放模块,研究电场对于果蔬代谢强度影响,保证后期电场保鲜技术在冰箱内更好的应用。
It was found in the earlier study that the metabolic intensity of the fruit under the low-temperature environment was significantly different with the change of the intensity of the electric field.The results show that under the condition of low electric field intensity(100 V^300 V),the release of ethylene is obviously reduced,and the metabolic intensity is low;and under the condition of high electric field intensity(300 V^1000 V),the release of ethylene is obviously increased,and the metabolic intensity is obviously increased.In this paper,the effect of electric field on the metabolism of fruits and vegetables is studied by increasing the electric field releasing module in the refrigerator,and the better application of the post-electric field fresh-keeping technology in the refrigerator is guaranteed.
