摘要
采用对比试验的方法,选用不同条件(压力、时间)的超高压处理苹果-黑果腺肋花楸复合果汁(AACJ),以色泽、pH、可滴定酸、可溶性固形物、花色苷、总黄酮、抗氧化活性(TAOC值)等为指标,研究超高压处理对AACJ品质的影响。试验结果表明:超高压处理对AACJ品质的影响不大,400 MPa处理15 min的效果最佳。
Using the method of comparative experiment,The effect of ultrahigh pressure treatment on AACJ quality was studied by using ultrahigh pressure treatment under different conditions(pressure and time),including color,pH,titratable acid,soluble solid,anthocyanin,total flavonoids,and antioxidant activity(TAOC value).The test results showed that:The effect of ultrahigh pressure treatment on AACJ quality is not significant,and the best effect is achieved by 400 MPa treatment for 15 min.
