摘要
目的研究湘西产猕猴桃中维生素E和维生素C的含量特点,阐述其独特营养价值。方法通过液相色谱法测定猕猴桃中营养成分维生素E(α-生育酚、β-生育酚、γ-生育酚、δ-生育酚)和维生素C的含量,并与其他水果的维生素E和维生素C的含量进行比较分析。结果湘西产的五个品种猕猴桃中“凤凰红心”的维生素E(以α-生育酚计)含量最高为2.79 mg/100 g,而维生素C(以L-抗坏血酸计)则是“湘西东红”最高为142 mg/100 g,五个品种两种维生素含量皆高于普通水果。结论湘西产猕猴桃维生素C和维生素E含量均较高,具有较好的营养价值及深加工应用前景。
Objective To study the characteristics of vitamins E and C content in kiwifruits produced in western Hunan province,and to elucidate its unique nutritional value.Methods Liquid chromatography method was used to detect vitamin E(including α-,β-,γ-and δ-tocopherols)and C content in kiwifruits,and the detection results were compared with those obtained from other fruits.Results Among five kinds of kiwifruits produced in western Hunan province,vitamin E content(based on measurement ofα-tocopherol)was found to be the highest in“Fenghuanghongxin”kiwifruit(2.79 mg/100 g),while vitamin C content(based on measurement of L-ascorbic acid)was found to be the highest in“Xiangxidonghong”kiwifruit(142 mg/100 g).Additionally,vitamins E and C content was higher in the five kinds of kiwifruits than in the common fruits.Conclusions Kiwifruits produced in western Hunan province possess higher vitamin E and C content,and present high nutritional and economical values.
