摘要
本实验主要是在果冻生产线上设置关键控制点,通过对南京福旺食品厂果冻生产线的工序、设备及环境中微生物污染状况的检验及大量的资料查询,确定了以原料、调理充填、杀菌、包装为关键控制点,建立了相应的HACCP计划并提出了相应的改进方法。
The test researched settin reference point on jelly product line of Nanjing Food Plant. Inspect to be conTaminated status by microbe on equipment of jelly product line. Confirmed four reference point (material, confectin, sterilization, packaging) and set up the HACCP plan and bring forward better method.
